Senior Housing News recently sat down with Luna to learn what drew her to the senior living industry, her perspective on culinary trends, her thoughts on the future of dining in senior living, and much more. SHN: What inspired you to pursue a career in senior living dining, and what continues to motivate your work today?

Luna: I spent many years as a restaurant manager, where I learned that great dining is about much more than serving food. It’s about hospitality, consistency, and creating memorable experiences for every guest.

When I transitioned into senior living, I saw an opportunity to bring that same restaurant quality experience to residents. It became more than a career; it became a way to make a meaningful difference in people’s daily lives.

Today, what motivates me most is knowing that something as simple as a great meal can bring comfort, spark conversation, and brighten someone’s day. 

SHN: What are the top three trends shaping the future of dining in senior living right now?

Luna: First, elevating senior living dining to a true restaurant style experience with high quality presentation, menu variety, and exceptional service.

Second, personalization giving residents more choices while accommodating individual dietary needs without sacrificing flavor or presentation.

Third, using creative design, from visually engaging menus and digital displays to showcasing meals through photography and marketing. These tools help create excitement around dining and strengthen the connection between residents, families, and the culinary team. 

SHN: What is the biggest barrier to innovation in senior living dining today, and how can organizations effectively overcome it?

Luna: The biggest barrier is being comfortable with “the way it’s always been done.” Innovation requires leaders who are open to new ideas and willing to invest in their teams.

My restaurant background taught me that continuous improvement is essential. Organizations that encourage creativity, listen to resident feedback, and empower their culinary teams to think outside the box will create dining programs that residents truly enjoy. 

SHN: In one word, how would you describe the future of dining in senior living – and why?

Luna: Hospitality.

Residents deserve the same level of service and dining experience they would expect in a great restaurant. The future of senior living dining is about creating welcoming environments, offering meaningful choices, and delivering meals that residents are genuinely excited about. 

SHN: How do you see technology transforming dining operations and the resident experience in the next few years?

Luna: Technology will continue to transform both behind the scenes operations and the resident experience.

As someone recognized for innovation through Canva, I’ve seen how thoughtful design can completely change the way dining is perceived. Food photography, and visual storytelling create excitement around meals while strengthening communication with residents and their families. Combined with operational technology, these tools allow culinary teams to be more efficient while delivering a more engaging dining experience. 

SHN: Reflecting on your career, if you could give yourself advice on your first day in senior living dining, what would it be and why?

Luna: I would tell myself to bring everything I learned from the restaurant industry but remember that success in senior living goes beyond excellent food and service. Take time to build relationships, listen to your residents, and never underestimate the impact you can have on their quality of life. Every interaction matters just as much as every meal.

SHN: What qualities or leadership traits do you think DISHED Senior Living Dining Innovation Award winners must embody?

Luna: Innovation starts with servant leadership. Award winners should be passionate, creative, adaptable, and committed to continuous improvement. They should lead by example, inspire their teams, embrace new ideas, and never lose sight of the people they serve.
