DISHED Senior Living Dining Innovation Awards: Chris Spezial, Director of Culinary Services, Atria Senior Living


Chris Spezial, Director of Culinary Services at Atria Senior Living, has been named a member of the DISHED Senior Living Dining Innovation Awards Class of 2026 by Senior Housing News.

As an Elevating the Experience Award winner, Senior Housing News recognizes Spezial for his ability to transform mealtimes into social experiences that deepen resident connections.

One of Spezial’s innovative approaches to senior living dining is the creation of “action stations.” Cooking live in front of an audience has increased engagement and satisfaction, bringing a new energy to the residents at Atria on the Hudson. Whether featuring a cooked-to-order station or live dessert presentation, these experiences have transformed the ordinary into a remarkable “dinner and a show.”

Another initiative spearheaded by Spezial is a monthly series called Food and Culture. This program brings different cultures to life through decor, music, activities, and cuisine. It has been so successful that it is now incorporated into the monthly Taste of Atria programming at other communities across the country.

Feedback is another core component of Spezial’s success. He leads a well-attended monthly Food for Thought meeting, listening to residents and implementing meaningful changes to better serve residents with integrity and care. Spezial also recently earned a 100% on Atria’s internal Quality Enhancement Survey, a reflection of the pride that he and his team take in their work.

Senior Housing News recent sat down with Spezial to learn what drew him to the senior housing & senior living industry, his perspective on culinary trends, his thoughts on the future of dining in senior living, and much more. SHN: What inspired you to pursue a career in senior living dining, and what continues to motivate your work today?

Spezial: My inspiration to pursue a career in senior living dining stemmed from seeing the experience my mother had — actually did not have — during her short stay at a senior living facility. I wish it had been an Atria community. I saw the opportunity to make a significant difference in the lives of those that are aging in place. It is not just food that fills breakfast, lunch, and dinner. It is so much more than that. Mealtime brings reassurance of the day and is the residents’ social connection that brings them so much bliss.

Being involved in the senior living community, especially my community, Atria on the Hudson, lets me combine the talents I have learned over the years of my career to create a positive experience for residents each day. I was especially drawn to the idea that a meal can improve someone’s mood, health, and overall quality of life.

SHN: What are the top three trends shaping the future of dining in senior living right now?

Spezial: Senior living residents want, expect, and demand more gourmet variety, dining flexibility, and top quality. We are moving toward chef-inspired menus with more ethnic and international influence and flavors, as well as menus that can be more personalized to their tastes.

Residents also like more options about when and where they eat, such as cafés, bistros, and outdoor dining spaces. Mealtimes are so much an experience for them and fill their social nourishment. Dining is becoming an experience rather than just a scheduled meal service.

SHN: What is the biggest barrier to innovation in senior living dining today, and how can organizations effectively overcome it?

Spezial: Most senior living communities have a good idea and understanding of what residents want. We ask while checking in the dining room, reading survey responses, and hosting forums to hear their concerns.

The biggest barrier is constantly navigating a shrinking workforce and the rising costs of food.

To overcome these challenges, one needs to be successful in creating an environment of hospitality with an engaged staff that has pride and passion for serving this population. With a labor statistic that 75% of employees are currently not engaged, the challenge of keeping our employees engaged is a key element to success.

Atria has been wonderful at removing the stigma of what people expect dining at a senior living community is and replacing it with a restaurant setting that focuses on hospitality and wellness. We create experiences for our residents, not just serve them meals.

SHN: In one word, how would you describe the future of dining in senior living – and why?

Spezial: Redefine.

Senior living communities are becoming more wellness-focused, hospitality-driven, and experience-centered. Dining at senior living communities has veered away from just providing meals for nutrition to incorporate social engagement and contribute to a high quality of life. One needs to welcome flexibility and deliver what the residents are paying for and asking for.

SHN: How do you see technology transforming dining operations and the resident experience in the next few years?

Spezial: Technology changes at a rapid speed each day. The biggest adjustment I see is the movement towards AI that allows integration into all day-to-day operational needs. This includes menu creation with full nutritional information, assistance with food cost and inventory, and algorithms that help design menus that residents are giving feedback on. This technology should be able to save time and enhance productivity and consistency.

SHN: Reflecting on your career, if you could give yourself advice on your first day in senior living dining, what would it be and why?

Spezial: If I could turn back the clock to that very first day, the advice I’d give myself would have been to listen more than I thought I needed to. Being thrown into a fast-paced environment, there was not much time to slow down and take it all in.

I had to focus immediately on staffing and schedules, and it did not allow me to understand all the employees behind the meals being created and served. I was not able to know my frontline staff who often knew what was working and what wasn’t long before I was able to figure it out.

SHN: What qualities or leadership traits do you think DISHED Senior Living Dining Innovation Award winners must embody?

Spezial: They should be a strong leader who constantly improves customer satisfaction and who delivers innovative dining experiences that enhance the well-being of their residents. Leadership demands hard work that contributes to a sense of community and keeps your team and colleagues excited and nurtured. I am fortunate to have 100% support from Atria to build my leadership skills.
